Who doesn’t love flapjacks? This is my twist on flapjacks that is healthier but still packs a yummy punch. Play around with the ingredients to make your own version. This also works really well with dried fruit and nuts. Dare I say even some Nutella?
200g Rolled Oats
50g Granola (I used Eat Natural breakfast granola)
70g Peanut Butter
70g Butter or Margarine
80g Golden Syrup
2 Mashed Bananas
1tsp Vanilla Extract
2tbsp Pumpkin Seeds
2tbsp Chia Seeds
Preheat oven to 180c/160c (fan). Grease and line a sandwich tin with low calorie spray and parchment paper.
Combine the wet ingredients in a large bowl and mix well. Add the dry ingredients to the bowl and mix until all the ingredients are completely incorporated.
Scoop the flapjack mixture into the sandwich tin. Ensure that the mixture is evenly spread across the tin. If some parts are thicker than others it will not cook evenly! Cook in the oven for approximately 30 minutes or until the flapjacks are but firm and are golden in colour.
Once cooked, move the flapjacks to a wire rack to cool. Slice into 16 squares and enjoy with a cuppa!
